What is Makhana and how it is produced?



Makhana, also known as fox nuts or lotus seeds, are the edible seeds of the Euryale ferox plant. They are commonly used in Indian cuisine and traditional medicine. Makhana is known for its health benefits, including being rich in protein, low in fat, and high in fiber, making it a popular snack for those looking to maintain a healthy diet. Processing of Makhana The processing of makhana involves several steps to transform the raw seeds into the edible form: Harvesting: The seeds are harvested from the Euryale ferox plant, which grows in water bodies like ponds and lakes. The plant produces fruits containing seeds. Collection: The mature fruits are collected from the water and sun-dried to facilitate the extraction of seeds. Seed Extraction: The dried fruits are cracked open to extract the seeds. This can be done manually or with the help of machines. Cleaning: The seeds are cleaned to remove any impurities, dirt, or unwanted materials. Roasting: The cleaned seeds are then roasted to make them puff. This is a crucial step, as roasting at the right temperature is essential to ensure that the seeds puff properly. Traditionally, this is done in a sand-filled pan over an open flame. Puffing: During roasting, the seeds puff up and become crispy. This process gives makhana its characteristic texture. Polishing: After puffing, the seeds are polished to improve their appearance. This can involve rubbing the seeds to remove any charred bits and to give them a uniform white color. Grading: The puffed and polished seeds are then graded based on their size and quality. Packaging: Finally, the processed makhana is packaged for sale. Proper packaging is essential to maintain the freshness and crispiness of the seeds.
